Cheesecake recipe

Cheesecake (my family's favorite version)

16 Graham Cracker squares

Roll crackers fine.

1 1/2 tbs sugar

1 t. cinnamon

4 tbs. melted butter

Add other ingredients to crushed graham crackers.

Line pie pan with graham cracker mixture.

1 lb. cream cheese

Beat cream cheese in electric mixer.

2/3 c. sugar

2 eggs

1/4 t. vanilla

Add sugar gradually and eggs one at a time to cream cheese. Add vanilla last.

Pour into pan, bake 20 minutes at 375.

2/3 pint sour cream

2 tbs. sugar

1/4 t. vanilla

Whip sour cream lightly in a separate dish. Add sugar and vanilla. Pour carefully over baked pie.

Bake for 5 minutes at 500 deg.

Cool and refrigerate.

Sounds so good, BJ -- I hope to try it soon. Is this the recipe that is somewhat "heart healthy"? - that I've seen before from your family --maybe not - I think that one used Neufchatel cheese? (Instead of full cream cheese)
